A classic recipe, if you ask me. This recipe never fails to whet one's appetite - for kids and adults alike. It is best to keep this in air-tight jar, ready to serve the unexpected guests.
Ingredients
125 g flour
1 level teaspoon baking powder (sieve together)
45 g butter
45 g raisins/ currants
45 g castor sugar
1 small egg (beaten slightly)
1 teaspoon vanilla essence (mixed together with egg)
Method
Prepare baking tray and oven
- Pre-heat oven to 200 degree C (400 degree F).
- Grease the baking tray.
Prepare the dough
- Sieve the flour and baking powder together.
- Add the butter to the flour. Cut the butter into small pieces in the flour.
- Rub the fat into the flour using your fingertips.
- Add sugar and dried fruit to mixture. Mix well.
Prepare the rock buns
- Mix in the egg and vanilla essence.
- Divide into 8 equal portions and heap unevenly on the greased baking sheet.
Bake the buns
- Bake the buns for 15-20 mins until golden brown
- Cool on a cake rake.
